How to fix dodgy gravy this Christmas – whether it’s too thin, thick or lumpy

Many of us are cooking Christmas dinner for the first time this year.

Coronavirus has separated us from our foodie family members, which has forced us to go it alone.

Unfortunately, this means many of us have run into difficulties in the kitchen.

Gravy can be one of the most difficult elements to pull off on the festive occasion.

Whether it’s too thick, thin or lumpy, so much can go wrong.

Thankfully, Daily Star Online has rounded-up some chef-approved cooking tips to help you salvage any ruined gravy this December 25.

What to do if gravy is too thin

Curtis Stone, a chef, shared his pro tips for salvaging jus that’s gone wrong.

Curtis told TODAY: “Thicken the gravy by adding extra starch.

“Mix together two teaspoons cornstarch and two teaspoons cold chicken broth or water or combine one tablespoon flour with one tablespoon room-temperature butter to form a paste.

“Whisk either combination into the warm gravy and simmer until the gravy thickens.

“If the gravy then becomes too thick, whisk in warm chicken or turkey broth a little at a time.”

What to do if gravy is too lumpy

Curtis recommends passing festive dinner accompaniment through a sieve to get any lumps out.

You should then whisk the mixture vigorously until you achieve a smooth texture.

The chef said: “Allow the mixture to strain without pressing it through the sieve…

“You can avoid lumps by whisking your roux vigorously as you slowly pour the cool broth into the pan.

“Alternatively, you can blend the gravy in a blender until smooth.”

What to do if gravy is too thick

Curtis has a solution for this cooking disaster too.

The pro chef recommends adding a little bit of stock at a time, stirring until you get the correct consistency.

Just make sure to do this too slowly or you’ll get a sauce that’s too thin!
